Catered or do it yourself?

We also hire out the hog roast machine for confident cooks. You do the roasting and carving; we will confirm what comes with it when you ask.

Catered or DIY? Catered means we do everything: roasting, carving, serving and clearing. With DIY hire, you do the work and save on staffing.

The process

Service is quick once we start carving: the chef carves and the team serves, with the sides served alongside. When everyone has eaten, we clear up and leave the spot tidy. Summer events in Great Haseley have daylight until about 9:25pm at midsummer and about 7:10pm by late September, so evening trading normally finishes in daylight in high summer. Winter fairs, dark by about 3:55pm, need a well-lit pitch.

  1. It starts with your event date, site and expected numbers.
  2. We check access to the pitch and send a price.
  3. We arrive early, set up on the pitch and start roasting.
  4. We carve rolls to order as the queue moves.
  5. We pack down, take our waste and leave the pitch clean.

How to prepare

  • Let us know about tight access
  • Check there is nothing overhead or close by that could catch the heat
  • Collect dietary needs and allergies in advance

About the food

Roast pork

Slow-roasted pork is the heart of the menu: carved thick or thin, as people like it, and served hot.

Rotisserie chicken

Rotisserie chicken is there for anyone who’d rather not have pork, and children generally like it too.

Planning for dietary needs

A little planning helps everyone eat safely. Here are a few tips:

  • Remember stuffing generally contains gluten
  • Show allergens at the stall
  • Share the event’s food safety requirements with us
  • Ask for gluten-free rolls if you expect coeliac visitors

We follow the organiser’s site rules, including when vehicles can move.

The vegan option is popular at festivals.

Great Haseley: your questions answered

Do you cater at venues in the Chilterns National Landscape?

Yes. Some venues there have rules about cooking and vehicles, so check with yours. We will work to whatever the site needs.

Do you come out to small places like Great Haseley?

No, we come to small places too. Let us know about access and the cooking spot.

What space does the roaster need?

Roughly the footprint of a gazebo or two, on level ground, away from buildings, marquee walls and overhanging trees. We’ll check it with you before booking.

Do you clear up?

Our staff clear the serving area, and we take our equipment with us.

What if things run late?

We’ll be as flexible as we can. Keep us posted on the day and we will adjust.

Can you help with a fundraiser?

Tell us about the event and how you’d like to raise money, and we’ll suggest a way to make it work.

Can visitors buy their own food?

That depends on the event. Tell us what you have in mind and we’ll discuss the options.

Do you need power or water?

The roaster runs on gas, so we do not need mains power to cook. A socket nearby is useful for lighting.

Working with your venue

Marquee suppliers typically set distances for cooking equipment, so let them know about the roaster. The roaster stays a safe distance from the marquee.

Some venues add a fee for outside caterers, so check before booking. We’ll work with the venue on access and the cooking spot.

Prices and what affects them

A few things make the biggest difference to the price:

  • Menu choices and extras
  • The serving time and how long we’re on site
  • How many people are eating
  • How easy it is to reach the spot

What you pay covers the meat, the chef and staff, and hours of roasting. Slow roasting means we’re on site for much of the day, and the quote reflects that.

What we need to know

Here’s what we’ll ask:

  • Which meats and sides you’d like
  • Anything the venue has asked for
  • Where the event is
  • The date and when you’d like to eat

Numbers not final yet? A rough figure is fine for a first quote, and you can confirm nearer the time. Use our quote form.

A hog roast compared with other options

Next to a burger van, a hog roast feels more special at a traditional fête. Numbers make the biggest difference: bigger groups typically cost less per head, because the roaster, staff and travel cost much the same either way.

Why Great Haseley hosts choose us

  • Fresh carving at the serving station
  • Served at the time you choose
  • Choices for people who don’t eat pork
  • The classics: stuffing, apple sauce and crackling
