Should I cook it myself?

Buying in a cold buffet is another option, but hot, freshly carved roast pork is a different experience.

Catered or DIY? With catering, our chef roasts, carves and serves, and our staff clear up. With hire only, you do the cooking yourself.

How the day works

We get there well ahead of service, since slow roasting can’t be rushed. The smell generally brings people over long before we carve. Evening food at a Tudeley Hale wedding often goes out just as the light fades: sunset is around 8:50pm in late May, 9:20pm at midsummer and 7:00pm in late September. A few lights by the serving table help guests and photos alike.

  1. Choose the main meal, the evening food or both.
  2. We send a quote with the menu and staffing.
  3. We confirm the cooking spot and access with the venue.
  4. We arrive early and roast slowly on site.
  5. We carve and serve, then clear away.

Preparing for the day

  • Confirm numbers ahead of the day
  • Plan somewhere sheltered for people to eat if it rains
  • Have a level outdoor spot ready

It is worth planning the cooking area in advance. We look for:

  • Serving inside the marquee or barn if allowed

  • Power for lights in the evening

If you’re unsure, send a photo of the space and the way in, and we will say what we think.

Organising for someone else?

Many venues set rules for outside caterers, from approved lists to where a gas roaster can go. Check early, and tell us what they ask for.

If the event is on someone else’s land, the landowner needs to agree to cooking and vehicles. Sort that first.

What comes off the roaster

Stuffing and apple sauce

Stuffing and a dollop of apple sauce turn a pork roll into a hog roast roll, just as they should.

Roast pork

Hours of slow roasting make the pork soft and full of flavour, and it is carved fresh as people come up.
