Grilled food is at its best when it’s hot, so we cook and serve through the agreed time. Slow-cooked meats are ready as soon as service begins, so nobody waits for the first round. For an evening barbecue in Viables, think about light: it’s light until about 9:25pm in June but only about 7:10pm in late September. After dark, the serving table needs lighting.
