- The venue’s agreement to a gas-fired roaster
- A sheltered place for people to eat if it rains

The process
Carving is part of the show: our chef carves the pork in front of the queue, with crackling for everyone who wants it. Around midsummer it stays light in Stede Quarter until about 9:15pm; by late September sunset is nearer 7:00pm, so summer evening service is usually in daylight. In December it’s dark by about 3:50pm, so the cooking and serving area needs lighting.
- It starts with your date, venue, numbers and serving time.
- We check the date and the cooking area, then send a quote.
- On the day, we set up on the agreed spot and start roasting.
- At serving time, the chef carves and the team serves.
- Afterwards we clear up and leave the spot tidy.
Getting ready for the day
- Measure the narrowest gate or passage
- Confirm numbers ahead of the day

Stede Quarter: your questions answered
Is Stede Quarter close to London?
Roughly 42 miles from the centre of London.
Do you cater at venues in the High Weald National Landscape?
Yes. Some venues there have rules about cooking and vehicles, so check with yours. We’ll work to whatever the site needs.
Does the roaster have to be outside?
The roaster always stays outside, under cover, away from buildings and marquee walls. We can often serve indoors if the venue agrees.
How far ahead should we book?
Summer Saturdays and December book up first. Quieter dates can often be booked at shorter notice. Ask and we will check.
What’s the price?
Each event is priced on its own, depending on numbers, menu, timings and travel. Tell us about your event for a quote.
What if it rains?
We cook under a gazebo, so rain isn’t a problem for the roast. A marquee, hall or barn for eating makes all the difference.
Is crockery included?
Plates are included. You can upgrade to china if you prefer.
What about coeliacs?
Ask for gluten-free rolls and we’ll bring them. We’ll give you full allergen information for every dish.
Why a carved hog roast beats a buffet
Full catering or machine hire? With catering we roast, carve and serve; with hire you do the cooking. Most hosts choose catering for anything bigger than a family party. Adding lamb, chicken, extra sides or china changes the price, so each one is itemised. A simple menu keeps the cost down.
Why us?
- Carved to order by a chef
- Lamb, chicken and vegetarian options alongside
- A choice of salads and potatoes
- Serving and clearing done for you

Diets, allergies and alternatives
You will get allergen information for everything we serve. To help:
- Find out who doesn’t eat pork, so we can bring lamb, chicken or vegetarian options
- Give us numbers for vegetarians and vegans so we bring enough halloumi skewers and vegan burgers or sausages
- We do not offer halal meat, so arrange that separately if it is needed
- Ask us to keep the vegetarian food separate and labelled
Name someone to meet us, ideally not the host, so you can enjoy yourself.
A second roast, lamb or chicken, gives people a choice, priced in the quote.

Spit-roast lamb

How we price a hog roast
Here’s what affects the price:
- Distance from us
- How easy it is to reach the spot
- Menu choices and extras
- The serving time and how long we’re on site
When comparing prices, compare the same things: menu, sides, serving time, staff, plates and travel. A cheaper headline price can leave things out.

- The date and when you’d like to eat
- Rules from the venue or landowner
