Allergies and dietary needs
Not everyone eats pork, so it’s worth adding an alternative. A few pointers:

- Give your coordinator the final menu
- Give us vegetarian and vegan numbers
- Put a dietary question on the invitation
We are on site for much of the day, out of the way, by the cooking area.
China crockery can be added for the wedding breakfast, as an extra.
How our wedding hog roast works in Bilting
The carving station becomes a focal point: people gather round as the chef carves. It is food and a bit of theatre. Popular choices include spit-roast lamb, halloumi skewers and carved roast pork, and we are often booked for marquee receptions and intimate weddings.
Near Bilting, weddings are often in fields, barns or gardens. A hog roast is made for that: no kitchen needed, just an outdoor cooking spot. Let us know about access and ground. The hog is roasted on site at your wedding, slowly, over several hours.

Bilting: your questions answered
Which station is closest to Bilting?
Wye station, about 1.7 miles south of the centre.
Can you cater after a service at Church of St Lawrence?
Yes, at a nearby hall, home or venue with room to cook outside. Churches rarely have space for a hog roast, so the food is normally elsewhere. Send us the address.
Is there a non-pork option?
The menu has lamb, chicken, vegetarian and vegan options. We do not provide halal meat.
Can you cook inside the marquee?
Always outside, away from the marquee walls. Serving inside is fine where allowed.
Does the roaster have to be outside?
The roaster always stays outside, under cover, at a safe distance from walls and tents. Serving inside is frequently possible, with the venue’s agreement.
Can we hire the machine and cook it ourselves?
DIY machine hire is available. We will explain what’s supplied and how it works when we quote.
What if our venue has its own caterer?
Many do, but some only allow approved caterers or charge a fee. Ask your venue early, and we’ll work with them on the details.
Can we offer lamb too?
Lamb and chicken are both available as a second option.

A hog roast or other catering?
Some couples have a formal meal and a hog roast in the evening; others have the hog roast as the main event. For larger numbers, a hog roast is usually good value, since one roast goes a long way. The menu, extras such as china and the serving time all affect the final price.

The process
Service is quick once we start carving: our chef carves and our staff fill the rolls or plates, and sides go out at the same time. Afterwards we clear the serving area and pack away. For a summer wedding in Bilting, the sun sets at about 9:15pm in late June and about 7:00pm in late September, which means an evening hog roast is generally served in daylight in high summer. For autumn and winter weddings, when it is dark by about 3:50pm in December, plan lighting at the carving station.
- Tell us whether it is the wedding breakfast, the evening or both.
- We send a quote with the menu and staffing.
- We confirm the cooking spot and access with the venue.
- We arrive early and roast slowly on site.
- Our chef carves and the team serves and clears.
How to prepare
- Plan a step-free way in for the equipment
- Confirm numbers ahead of the day
- Let us know about tight access

For planners, venues and organisers
If you are organising for someone else, whether you’re a planner, a PA or on a committee, let us know who we’ll deal with on the day. We’ll keep everyone in the loop.
Venues frequently have rules for outside caterers, from approved lists to where a gas roaster can go. Ask early, and tell us what they ask for.
Should I cook it myself?
We also hire out the hog roast machine for confident cooks. You cook and carve it yourself; we will explain what’s supplied and how it works when we quote.
Roasting a whole hog yourself is possible, but it takes hours of attention, from early set-up to carving at the end. A catered hog roast means you can enjoy the day.
