Slow-roasted pork in Empshott

DIY versus a catered hog roast

You could go for a cold buffet, but hot, freshly carved roast pork is a different experience.

DIY hire works best when someone in the family loves cooking. For weddings and bigger events, a catered roast is typically easier.

How our wedding hog roast works in Empshott

As a main meal, the hog roast is served on plates: carved pork with salads, new potatoes or roast potatoes, on china if you’d like. We are often asked to cater wedding breakfasts and weddings in a marquee, with new potatoes, halloumi skewers and rotisserie chicken.

There’s something special about a country wedding near Empshott, and a whole hog roasting through the afternoon adds to it. Plan a firm route in, especially if it rains. Everything we need to roast, carve and serve comes with us, and we pack away and leave the area as we found it.

Empshott questions

Do you come out to small places like Empshott?

Not at all. We cater in villages and hamlets as well as towns. Let us know about access and the cooking spot.

Do you cater at venues in the South Downs National Park?

Yes. Some venues there have rules about cooking and vehicles, so check with yours. We will work to whatever the site needs.

How far ahead should we book?

Summer Saturdays and December book up first. Quieter dates can frequently be booked at shorter notice. Send your date and we’ll check.

Can you cater for vegetarians?

There are lamb, chicken, vegetarian and vegan options: spit-roast lamb, rotisserie chicken, halloumi and vegetable skewers or a vegan burger or sausage. Please note we do not offer halal meat.

Will our venue allow a hog roast?

It depends on the venue. Check with them first, and we’ll work with them on the details.

Where do you cook at a marquee wedding?

Outside, under its own cover, a safe distance from the marquee. We can serve inside the marquee if the supplier agrees.

What if things run late?

Within reason, we can. Give us a contact on the day and we will fit around changes.

Can the hog roast be cooked indoors?

Outside, always. The food can be carried in and served indoors where the venue allows.

About the food

Spit-roast lamb

Lamb roasted on the spit is a lovely alternative to pork, especially for guests who don’t eat pork.

Crackling

Long, slow roasting turns the skin into crackling, and there’s a piece for everyone who wants it.

Diets, allergies and alternatives

With a bit of planning, dietary needs are easier to handle. A few tips:

  • Confirm final numbers a week or so before
  • Ask for gluten-free rolls for coeliac guests
  • Note which guests don’t eat pork, for lamb, chicken or a vegetarian choice
  • Halal isn’t offered, so plan separately if needed

We will liaise with your venue coordinator, so we can sort the cooking spot and timings with them.

Choose sides to make it a full meal.

The process

The secret is time: hours of gentle heat make the pork soft and juicy while the skin turns into crackling. Then it rests briefly before our chef carves. In Empshott, midsummer sunset is about 9:20pm, and by late September it’s nearer 7:05pm, which means an evening hog roast is normally served in daylight in high summer. For autumn and winter weddings, when it’s dark by about 4:00pm in December, plan lighting at the carving station.

  1. You tell us your date, venue, numbers and whether it is the wedding breakfast, the evening or both.
  2. You get a check on the date and venue, and a quote.
  3. We agree arrival, cooking spot and serving times with you and your venue.
  4. We roast during the ceremony and drinks, then carve at the agreed time.
  5. Afterwards we tidy our area and leave you to the party.

Space, access and the venue

The roaster needs space, cover and a safe distance from anything that could catch the heat. Before booking, check:

  • A level spot near, but not too near, the marquee
  • A safe distance from marquee walls, buildings and trees
  • The venue’s agreement to a gas-fired roaster

Not sure about the cooking spot? Send us a picture and we will tell you honestly before booking.

Choosing a hog roast caterer

A hog roast or other catering?

If your venue has an in-house caterer, check whether you can bring in a hog roast. Some venues charge a fee. When comparing prices, compare the same things: the menu, sides, service time, staffing, crockery and travel. A cheaper headline price can leave things out.
