How the day works

On the day, we set up the roaster on the agreed spot, put the cover up and start the roast. It then roasts slowly for several hours, timed so it’s ready when you want to eat. In Hillway, midsummer sunset is about 9:20pm, and by late September it’s nearer 7:10pm, so evening food is often carved in daylight in June and July. Later in the year, plan lighting: in December it’s dark by about 4:00pm.

  1. We start with your date, venue, numbers and running order.
  2. You get a check on the date and venue, and a quote.
  3. We agree arrival, cooking spot and serving times with you and your venue.
  4. The hog roasts through the afternoon, and our chef carves on cue.
  5. Afterwards we tidy our area and leave you to the party.

Before we arrive

  • Gather dietary requirements early
  • Have a covered area for eating in case of rain
  • Confirm numbers ahead of the day

For event organisers in Hillway

Is a hog roast right for your wedding?

Next to a cold buffet, hot rolls carved to order go down much better late at night. When comparing prices, compare the same things: menu, sides, serving time, staff, plates and travel. The cheapest quote isn’t always the best value.

Why book our hog roast in Hillway

  • Carved to order by a chef
  • Our staff serve and clear
  • A clear quote with everything listed
  • Cooked on the day, low and slow

Prices and what affects them

We work out each quote from:

  • Busy dates such as summer Saturdays
  • Plates or china
  • Menu choices and extras
  • Travel to Hillway

Most of the cost is the meat, the staff and the time on site. A long, slow roast means an early start, which is built into the price.

Getting an accurate quote

When you contact us, it helps to include:

  • Any extras, such as lamb, chicken or china
  • What the outdoor space is like
  • Rules from the venue or landowner
  • Rough numbers

Every wedding is quoted on its own, because numbers, menu, serving time and travel vary. Ask us for a quote for your wedding: send us your details through our quote form.

Should I cook it myself?

We also hire out the hog roast machine for confident cooks. You do the roasting and carving; we will confirm what comes with it when you ask.

Roasting a whole hog yourself is possible, but it takes hours of attention, from early set-up to carving at the end. A catered hog roast means you can enjoy the day.

Where the roaster can go in Hillway

It is worth planning the cooking area in advance. The ideal spot has:

  • A short walk from the serving station to the guests
  • Light near the carving station after dark
  • A safe distance from marquee walls, buildings and trees

For somewhere as remote as Hillway, early notice helps us plan the trip.

Not sure about the cooking spot? Send us a photo and we’ll tell you honestly before booking.

Rolls and gluten-free rolls

Rolls or plates? Rolls are quicker; plates suit a sit-down meal, and gluten-free rolls are available on request.

Stuffing and apple sauce

Sharp, sweet apple sauce and savoury sage and onion stuffing go with the pork perfectly. Stuffing normally contains gluten.

Hillway: your questions answered

Is Hillway too small for a hog roast?

Not at all. We cater in villages and hamlets as well as towns. Let us know about access and the cooking spot.

Can you cater after a service at Bembridge Methodist Church?

Yes, at a nearby hall, home or venue with room to cook outside. Churches rarely have space for a hog roast, so the food is typically elsewhere. Tell us where you will gather.

Can you cook inside a hall or marquee?

No, the roast is always cooked outdoors under cover, at a safe distance from walls and tents. Serving inside is frequently possible, with the venue’s agreement.

Can we offer lamb too?

Lamb and chicken are both available alongside the hog.

What do you need from us on the day?

The agreed cooking area, access for our equipment and someone to meet us. We bring everything else.

What happens in bad weather?

We roast under cover, so the food isn’t affected. Your guests will want somewhere dry to eat.

Can you cater in Hillway?

Yes, Hillway is in our area. Tell us the venue or postcode and we will confirm availability.

How do you work out quantities?

Quantities are based on your numbers, and we will confirm everything in writing.

Planning for dietary needs

Tell us about dietary needs early and we’ll help. Some ideas:

  • Give final numbers in good time
  • Ask for gluten-free rolls for coeliac guests
  • Pass numbers for vegetarians and vegans to us
  • Collect dietary needs with RSVPs

We’re on site for much of the day, working quietly in the background.

Lamb alongside the pork gives guests a choice.

  • Roasted on site for several hours, outdoors under cover
  • Our chef carves the pork, with stuffing, apple sauce and crackling on the side
  • Not just pork: spit-roast lamb, chicken and vegetarian choices
  • Served by our staff at the time you choose, then cleared away
