How the day works
It is a relaxed, well-organised set-up. We agree arrival and serving times in advance, set up where we’ve agreed, and roast, carve and serve without fuss. In December, daylight in Regents Park ends around 4:00pm, so a late lunch or wrap at base needs lighting. In summer, light lasts until about 9:25pm.
