The process

We work to your timings. If the day runs behind, we can hold the cooked roast for a while before carving, so tell us as soon as plans change. By late September, sunset near Well Street is about 7:00pm, so a late wrap needs lighting at base.

  1. We start with the location, call times and numbers.
  2. We check the route and send a price.
  3. We agree our position at base with the location manager.
  4. We roast through the morning and carve fast when lunch is called.
  5. Afterwards we clear our spot at base.

Before we arrive

  • Keep the spot clear of buildings, marquee walls and overhanging branches
  • Have a covered area for eating in case of rain
  • Check there’s a route to wheel the equipment in, without steps

What comes off the roaster

Salads, potatoes and coleslaw

Salads, new potatoes, coleslaw and roast or jacket potatoes turn rolls into a full meal.

Spit-roast lamb

Lamb roasted on the spit is a lovely alternative to pork, especially for crew who don’t eat pork.

What the cooking area needs

The roaster needs the right spot, because it cooks outside for several hours, and a little planning goes a long way:

  • Shelter for crew
  • A contact in production
  • Approval from locations

Not sure about the cooking spot? Send us a photo and we will tell you honestly.
