What happens on the day
When we arrive, we position the roaster under cover and get the hog cooking. It then roasts slowly for several hours, worked back from your serving time. For a summer wedding in New Denham, the sun sets at about 9:25pm in late June and about 7:05pm in late September, which means an evening hog roast is usually served in daylight in high summer. For autumn and winter weddings, when it’s dark by about 3:55pm in December, plan lighting at the carving station.
- Choose the main meal, the evening food or both.
- We send a quote with the menu and staffing.
- We confirm the cooking spot and access with the venue.
- We set up and roast for hours.
- Our chef carves and the team serves and clears.
Preparing for the day
- Gather dietary requirements early
- Check there’s nothing overhead or close by that could catch the heat

Every wedding is quoted on its own, based on numbers, menu, timings and distance. Tell us about your wedding for a quote: use our quote form.
Should I cook it myself?
Full catering or machine hire? With catering, our chef roasts, carves and serves, and our staff clear up. With hire only, you do the cooking yourself.
You could roast a hog yourself, but it’s a long day’s work, from setting up and lighting the roaster to carving. With us catering, you get to be a host, not a cook.
Working with your venue
Booking for a club or group? A single point of contact keeps things simple, particularly when timings shift.
Marquee suppliers generally set distances for cooking equipment, so tell them a hog roast is coming. We’ll keep the roaster well clear of the marquee.

Diets, allergies and alternatives
With a bit of planning, dietary needs are easier to handle. Here are a few tips:
- Give us vegetarian and vegan numbers
- Give your coordinator the final menu
- Put a dietary question on the invitation
- Note which guests don’t eat pork, so we can add lamb, chicken or vegetarian options
We’ll be at the venue for most of the day, out of the way, by the cooking area.
For a sit-down meal, ask for china, quoted separately.
A closer look at the menu
Halloumi and vegetable skewers (V)
For vegetarians, halloumi and vegetable skewers are cooked separately from the meat, so they get something hot and satisfying too.
Stuffing and apple sauce
Stuffing and a dollop of apple sauce turn a pork roll into a hog roast roll.
Why a carved hog roast beats a buffet
If your venue does its own catering, ask whether outside caterers are allowed for evening food. There may be a fee. Midweek and quieter months are often easier to book, and the menu you choose makes a difference too. Tell us your budget and we’ll suggest what works.
